Why is cider dry when apples taste sweet?
Yeast eats the sugar. During fermentation it turns the fruit sugars in apple juice into alcohol and CO2. Left to finish, cider ends up dry, below about 0.4% residual sugar. Sweet ciders keep sugar by stopping fermentation early, by keeving, or by adding juice or sweetener afterwards.

Key facts
- Fermentation uses sugar. Juice sugar becomes alcohol; a full ferment finishes dry. [1]
- Dry = under ~0.4% RS in BJCP terms. [1]
- Sweetness is kept, not grown. It comes from arresting fermentation or adding sweeteners or fresh juice. [1]
Where does the sugar go?
Cider is the fermented juice of crushed apples. [1] Yeast converts the fruit sugars into alcohol, so the sweeter the juice, the more alcohol a fully fermented cider can reach. BJCP lists finishing gravities for common cider as low as 0.995 (below water), which means essentially no sugar is left. [2]
How do makers keep cider sweet?
By stopping fermentation early or adding sweetness back afterwards. [1] The methods are compared in how to sweeten cider.
Why do dry ciders still smell like apples?
Fermentation leaves apple-derived esters and floral notes, so a dry cider can be aromatic but wine-like on the palate. [2]

Questions
Why do some dry ciders taste fruity?
Apple-derived esters and floral notes remain after fermentation, so a dry cider can smell fruity without tasting sweet. [2]
