What is dry cider?

Dry cider is cider fermented so little residual sugar remains, leaving a finish that is not sweet. Brut-style French cidre and many English farmhouse bottles aim dry. Dry does not mean low alcohol — a dry cider can still sit at Common Cider strength. Label words and tasting scales help more than the word cider alone.

Key facts

  • Residual sugar. Dry cider finishes with little leftover sugar after fermentation. [1]
  • Not the same as tannic. A cider can be dry and soft, or dry and astringent; dryness is about sugar, not bitterness. [2]
  • Label words. Brut and dry are common cues; makers still vary — taste and rate rather than trust one word alone.

What does dry cider mean?

Dry means most fermentable sugar has been consumed, so the finish feels crisp rather than syrupy. [1] Common Cider notes cover a wide residual-sugar band; farmhouse bottles often sit toward the dry end. [2] Sweetness on Cider Radar is a 1–5 scale you can use beside the label. Is dry cider the same as brut?

French cidre labels often use extra brut, brut, demi-sec and doux (décret 2025-162); extra brut is drier than brut. Exact g/L cut-offs belong in the decree — treat the words as a dryness ladder. [3] Confirm with does dry cider have less sugar and the guide sweetness levels. Brut usually signals a very dry sparkling finish, borrowed from wine language. Not every dry cider is labelled brut, and not every brut bottle tastes identical. Compare tasting notes on the bottle card and the glossary entry for brut when you need a definitional anchor.
