What is calvados?
Calvados is a French brandy distilled from cider and perry made in Normandy and neighbouring areas, then aged in oak for at least two years. It has three protected appellations: Calvados, Calvados Pays d'Auge and Calvados Domfrontais. It is sold at 40% ABV or more, and it is the base for Pommeau de Normandie.

- From cider, not straight from apples. Calvados is an eau-de-vie distilled from cider or perry; about 18 kg of apples make 13 litres of cider at 5%, which distil to 1 litre at 70%. - Fruit. The appellations cover 8,000 hectares of orchards with 230 apple varieties and 139 pear varieties. [3]

What does AOC mean on calvados?
The Calvados interprofession describes an AOC as "a French label identifying a product whose various stages of manufacturing (production and processing) are carried out in the same geographical area and according to recognised know-how"; France's first AOCs were awarded in 1936; Calvados Pays d'Auge followed in 1942. How is calvados drunk?
Old calvados is usually sipped neat after a meal, from a tulip-shaped glass, or with coffee as a "Café Calva". [13] Young calvados of 2–4 years, with fresher fruity or floral aromas, is used for aperitifs, long drinks and cocktails, and the interprofession suggests VS served icy cold with smoked fish and VSOP with Normandy cheeses.
