What is the best calvados?

There is no single best calvados: the right one depends on how you'll drink it. Young calvados (VS, at least 2 years) suits cocktails and casual drinking; VSOP pairs with Normandy cheeses; older XO or vintage calvados is for sipping neat from a tulip glass. Choose the appellation too: Pays d'Auge, Domfrontais or Calvados.

Which calvados should I choose for cocktails or after dinner?

  • Cocktails and long drinks: young calvados of 2–4 years keeps fresh fruity and floral aromas. [1]
  • With food: the interprofession suggests VS served icy cold with smoked fish, and VSOP with Normandy cheeses or foie gras. [1]
  • After dinner: older calvados is sipped neat from a tulip-shaped glass. [1]

Which appellation should I choose?

The three appellations are explained in the calvados glossary entry.

  • Calvados Pays d'Auge: double-distilled in a pot still, at least 70% apples. [3]
  • Calvados Domfrontais: column-distilled, at least 30% perry pears, at least 3 years in oak. [4]
  • Calvados: no single method is required; most is column-distilled, but pot stills are allowed too. It is the only one of the three appellations that allows both. [5] [6]

Other things to check

  • Strength: usually 40% ABV; cask-strength bottlings go up to about 55%. [7]
  • Producer: try a few houses at the same age to find a style you like.
