Can cider go bad?

Yes, cider can go bad: it slowly loses quality, and faster once the bottle is open. Air lets cider oxidise and can turn it stale or vinegary, because vinegar bacteria need oxygen. A best-before date on cider is about quality, not safety, and it only holds if the bottle is stored as the label says.

How can you tell if cider has gone off?

After the best-before date, UK guidance suggests using sight, taste or smell to judge a product. [1] For cider, the usual signs are:

  • A sharp, vinegary smell or taste, from acetic acid formed by oxidation. [2]
  • Off, stale flavours from the other oxidation products, acetaldehyde and ethyl acetate. [2]
  • Unexpected fizz or pressure in a still or sweet cider. Leftover sugar and live yeast can start a second fermentation in the bottle; the guide warns this can even make bottles explode, which is why makers pasteurise or sterile-filter sweetened cider. [2]

Haze or sediment alone is not a fault: a bottle-conditioned cider keeps live yeast in the bottle on purpose. [2]

How should you store cider?

  1. Unopened: follow the storage instructions on the label. [1]
  2. Opened: reseal the bottle to limit air, since oxygen drives both oxidation and the vinegar bacteria, and follow any "once opened" advice on the label. [2] [3]

Does old cider turn into vinegar?

Does unopened cider expire?

Is cloudy cider off?
