And for good measure: vegan, raw, organic, and ultra-local—sourced from chemically untreated trees. And best of all—unique every year! Production: Made using the French method. Slow fermentation. Long maturation periods in tanks followed by further aging in the bottle. Largely spontaneously fermented. We source apples from old manor orchards—which we are gradually replenishing with new standard-height trees of heritage varieties—or from trusted local suppliers. We press the apples on a refurbished 1957 German Hollmann line. In addition to ciders, we produce fresh fruit juices and herbal syrups using ingredients from our own garden and the surrounding meadows and forests. We operate out of the former sawmill and carpentry workshop belonging to Lobeč Manor; we converted the space using a low-cost "house-within-a-house" approach, utilizing primarily waste and recycled materials. Ecology: We harvest rainwater for irrigation, use no chemicals, and never pack shipments in new boxes—we always reuse existing ones... Plus: We are revitalizing old orchards. Saving heritage apple varieties. Grafting and replanting. Restoring old paths in the landscape around Lobeč.
