Where can I buy ice cider?

Ice cider is sold mainly by cideries in Quebec, where it is a protected name, and by wine and spirits shops that import it. It is also made outside Quebec. Look for "Cidre de glace du Québec" on the label if you want the protected Quebec version made under its official rules.

Key facts

  • Protected name. "Cidre de glace du Québec", a protected ice cider, is a Protected Geographical Indication (IGP) in Quebec. [1]
  • Official rules. It is made from late-ripening apple varieties grown in Quebec, with sugars concentrated only by natural cold; the apples are pressed between 1 December and 1 March. [1]
  • Sweet and fairly strong. The finished cider must have at least 140 g/L of residual sugar and 9–13% ABV, both from the apples' own sugars, with no colourings or flavourings. It can be still or sparkling. [1]
  • Made elsewhere too. BJCP says ice cider "originated in Quebec in the 1990s" and gives a 7–13% ABV range for the style in general. [2]

Where is ice cider sold?

  1. At the source: Quebec cideries sell ice cider at their shops and on their own websites.
  2. Wine and spirits shops: in shops, look for ice cider among dessert wines as well as in the cider section.
  3. Read the label: "Cidre de glace du Québec" means the IGP rules apply. Other ice ciders may be made differently; check the producer's description, or see how ice cider is made.
