What is boiled cider?

Boiled cider is a thick syrup made by boiling fresh, unfermented apple cider down to about one-seventh of its volume. It is a traditional New England farm product, once called "apple molasses", and is used mainly in baking. It is not alcoholic, and it is different from fire cider, which is fermented from boiled juice.

How is boiled cider used?

How is boiled cider made?

  1. Start with fresh, unfermented cider. In US usage that means fresh apple juice; see what sweet cider is.
  2. Boil it down. Reduce to about one-seventh of the volume, skimming the foam. [1]
  3. Stop at a syrup. The finished product has the consistency of syrup. [1]

Is boiled cider the same as fire cider or ice cider?

No. All three start by concentrating apple juice, but:

  • Boiled cider is concentrated by heat and is not fermented. [1]
  • Fire cider is concentrated by heat and then fermented; BJCP 2025's C2D Fire Cider is 9–16% ABV. [2]
