Does kombucha need to be refrigerated?

Unpasteurised kombucha usually needs refrigeration. Its live cultures can keep fermenting and raise the alcohol level, so producers label it "Keep Refrigerated"; New York requires it to be kept at or below 41°F (5°C). Pasteurised kombucha with a pH of 4.2 or lower is considered shelf stable. Follow the label.

How should I store kombucha?

  1. Read the label. "Keep Refrigerated" means it should go in the fridge.

  4. Preservatives don't replace the fridge. In New York's guidance, kombucha with added sodium benzoate and potassium sorbate must still be refrigerated. [1]
