Where do the calories in kombucha come from?
From sugar. TTB describes kombucha as "a fermented beverage produced from a mixture of steeped tea and sugar, combined with a culture of yeast strains and bacteria". [2] The culture uses some of the sugar during fermentation, and what is left gives most of the calories. [1] A study of commercial kombucha found large differences between brands, including in alcohol content, which ranged from 0% to 1.29%.
