Can you use apple cider vinegar for pickling?
Apple cider vinegar works for pickling if it has 5% acidity: the US National Center for Home Food Preservation recommends white distilled and cider vinegars of 5 percent acidity. Use a tested recipe, do not change the vinegar, food or water proportions, and avoid homemade vinegar of unknown acidity. White vinegar is preferred where a light colour matters.

How do I check my vinegar?
- Acidity on the label. Look for 5% (sometimes written 50 grain). [1]
- Condition. Iowa State says vinegar showing cloudiness, sediment or other changes, or kept in an open or damp container, may be below 5% acidity and should not be used for canning. [2]
- Not homemade. Homemade vinegar "can vary in acidity" and is not recommended for canning. [2]
Cider vinegar or white vinegar?
Both are recommended at 5% acidity. [1] NCHFP adds that white vinegar is usually preferred when a light colour is wanted, as with fruits and cauliflower. Is old vinegar OK?
